I am looking for a recipe for Potato Pork Cakes. The recipe uses fat back pork and potatoes. They are popular in the Grand Bank area.
Boil and mash about 8 large potatoes. Cut up finely 1lb. salt pork (fat back) and fry until crisp.. Drain off fat and add the crisp pork to the mashed potato. Next sift 3 tsp. baking powder into 2 1/2 cups sifted flour. Add to potato mixture. Form into buns and bake at 350 F until brown & crusty, about 1/2 hour. This is from a old cookbook published in 1974 titled Fat-Back and Molasses. Mrs. Florence Wilkinson- Moores, Topsail, submitted this recipe to the cookbook.
